I have fond memories from Childhood about making pb fudge with my dad at Christmas but I've tried a zillion recipies and none of them tasted quite like my dad's. then I found this one. there are a few differences b/c my dad used to use canned milk and make it in an electric skillet but when I made this one, it tasted ALMOST as good as Dad's. It was GREAT! Try it you won't be sorry. But you have to get the milk/sugar mixture the right consistancy so be careful!
2 cups granulated sugar
1 cup milk
1/2 stick margarine
pinch of salt
1 cup peanut butter
1 teaspoon vanilla
Mix sugar, milk, margarine and salt in a saucepan. Boil, stirring frequently, until it forms a soft ball in cold water. Remove from stove and add peanut butter and vanilla. Beat until creamy and pour into buttered 9x9 pan. Let cool before cutting.
*If you want chocolate peanut butter fudge, add 1 heaping teaspoons of cocoa to the top four ingredient before cooking.
