    Mac N Cheese

besides doing it the box way, does anyone make Mac N Cheese a different way? (i guess from scratch or semi scratch)

I make it home made, but usually only for occasions or when I'm feeding a bunch of people.  It's super easy and SUPER yummy! :)  Also, you could cut the ingredients to make less.

1 lb large elbow macaroni boiled and drained

2/3 lb. of sharp cheddar shredded

2/3 lb. of monterey jack shredded

    mix cheese together

I buy the block cheese and shred it myself, because to me it seems to melt better, but that may be all in my head.  And I like it really cheesy, but less can be used and still be good.

Mix about 1/2 of the cheese in the warm macaroni noodles and put in a 9x12 baking dish (or anyother that it will fit in)

Top with the rest of the cheese and put in the oven for about 10 minutes (just until the cheese is fully melted)

That's it!  I haven't made it in a while, but thinking about it is making me want some :):)

I make it semi homemade by buying the noodles and then adding velveeta and shredded cheese over the top. Sometimes I add in broccoli or small peices of bacon too, it's yumo!

I like adding bacon or ground beef to mine (already cooked).

I make baked Mac and Cheese from scratch and it is always a hit, so here it goes. I have been doing it for years, so I don't really have measurements, but you can't really mess this up.

Boil the bag (however big you want) of macaroni.

I make a cheese sauce, it seems to do away with lumps.

Melt about a tablespoon of butter in a deep skillet, and then add an equal amount of flour.  It will make a paste, then wisk in about a cup and a half of heavy cream or milk.  Wisk together until all lumps are gone and then add all the cheese you want, I usually use about 2/3 -3/4 lb, but you can use more or less.  Just add the cheese slowly so that you don't end up with a big glob.  if you do get a big glob just add more cream or milk.  Season the sauce to taste then add the macaroni and bake for about 30 minutes.

My sister adds italian bread crumbs the last 15-20 minutes to brown and make a crisp top and a girlfriend adds crushed potato chips to hers.  Good luck playing with it.

This is my Dad's recipe from his Deli (good thing he doesn't go online to see me giving away his secretWink) Anyways one pound of dry macaroni, one pound milk and one pound of land of lakes yellow american cheese. Just heat the milk and the cheese and pour it over the cooked macaroni. Delicious and super easy cheese sauce.
