    Re: Broccoli n cheese cassarole?

I have not yet made this, but it does sound good! If you haven't found one already, here you go!

    Broccoli and Cheese Casserole
2 tablespoons butter, plus 2 tablespoons butter
    1/2 cup finely chopped onion
    3 tablespoons flour
    1 1/2 cup hot milk
1 1/2 cups grated sharp cheddar
2 heads broccoli, cut into 2-inch pieces, quickly steamed
1 1/2 cups crushed butter crackers

Preheat oven to 350 degrees F.

Melt 2 tablespoons of butter in medium saucepan over medium high heat. Add in onions and cook until translucent, about 4 minutes. Stir in flour and stir to coat onions. Cook for 2 minutes. Remove from heat and whisk in hot milk. Return to heat and bring to a simmer. Stir in cheese by the handful. Add broccoli to the cheese sauce and pour into buttered casserole dish.

Melt remaining butter in a small skillet and stir in cracker crumbs. Cover the broccoli casserole with the buttered cracker crumbs. Bake until bubbly and lightly browned, about 20 minutes.

    and this one too!

    Cheesy Broccoli Bake

2 pounds fresh broccoli, trimmed and cut up
2 tablespoons unsalted butter, plus more for greasing the casserole
    1/4 cup chopped celery
    1/4 pound fresh mushrooms, sliced
    1/4 cup chopped onion
1 (8-ounce) can sliced water chestnuts
1 (10 3/4-ounce) can condensed cream of mushroom soup
    1/2 pound cheese product, softened
    1/2 teaspoon garlic salt
    1/4 teaspoon pepper
    1 cup grated Cheddar

Preheat the oven to 350 degrees F. Butter a 9 by 13-inch casserole.

Steam the broccoli until tender, about 10 minutes. In the meantime, melt the butter in a medium skillet over medium heat and saute the celery, mushrooms, and onion until softened, about 10 minutes; drain. Combine the broccoli and the cooked vegetables in a bowl.

Heat the soup and softened cheese product in a saucepan over low heat until the cheese melts. Pour it over the broccoli mixture. Add the garlic salt and pepper and combine.

Put it into the buttered casserole dish and bake for 20 to 25 minutes. Sprinkle the top with the grated Cheddar the last 5 minutes of baking.

    Re: Broccoli n cheese cassarole?

I have a super duper easy one and it is fantastic. I make it a lot and especially for the Holidays.

This makes an entire 13x9 casserole dish full

2 (10 oz) packages of frozen chopped broccoli

2 cans cream of mush soup

    2 cups instant rice

3/4 cup chopped onion (I omit this step)

1/4 cup butter (I also omit this step as it is just used to saute the onions)

1 (16oz) jar of cheeze whiz

    salt and pepper to taste

    To Cook:

Cook rice as directed on box, Cook Broccoli as directed.(saute onions and butter if you so choose) Mix everything together in a big bowl, mix it well.

Put in a 13x9 and cook at 350 degrees for 30-40 mins.

It doesn't get any better than this!
